<p>Being a chocolate connoisseur, I have very high standards for chocolate desserts.  Any brownie recipe that calls for 11oz of dark chocolate has be delicious, right? Chocolatey, moist, and fudge-like, these brownies will satisfy any-one&#8217;s sweet tooth.  Plus, there is espresso in them to boot!</p>
<p>This recipe comes from <a href="http://bakednyc.com/">Baked, NYC </a>in Brooklyn and the cookbook is outstanding.  If you love deserts, this is a must for your cookbook collection.  Hopefully, I will be making a trip to NYC in November and I will be making a trip to this Brooklyn bakery.</p>
<p>Enjoy!</p>
<p>The Baked Brownie<br />
from Baked: New Frontiers in Baking by Matt Lewis and Renato Poliafito</p>
<p>1 1/4 cups all-purpose flour<br />
1 tsp salt<br />
2 tbsp dark unsweetened cocoa powder<br />
11 oz dark chocolate (60 to 72% cacao), coarsely chopped<br />
1 cup (2 sticks) unsalted butter, cut into 1-inch pieces<br />
1 tsp instant espresso powder<br />
1 1/2 cups granulated sugar<br />
1/2 cup firmly packed light brown sugar<br />
5 large eggs, at room temperature<br />
2 tsp pure vanilla extract</p>
<p>Preheat the oven to 350ºF. Either butter a 9&#215;13 pan or place parchment in the pan and butter (I used parchment so it would be easier to pull the whole thing out of the pan to slice the brownies).</p>
<p>In a bowl, combine the flour, salt, and cocoa powder.</p>
<p>In a glass bowl over a pan of simmering water, combine the chocolate, butter, and espresso powder. Stir until the butter and chocolate are melted and the mixture is smooth. Turn off the heat and add the sugars, mixing until fully combined.</p>
<p>Add 3 of the eggs and mix, then add the other two eggs and the vanilla and whisk until combined.  Do not overbeat.</p>
<p>Fold the dry ingredients into the chocolate mixture with a rubber spatula until just combined, leave just a bit of flour visible.</p>
<p>Pour into the buttered pan and smooth. Bake for 30 minutes, rotating halfway through. It&#8217;s done when a toothpick comes out mostly clean with a few crumbs. Cool completely and then slice.</p>
<p>I usually refrigerate the brownies for a few hours before I slice the brownies, I find that makes it easier.</p>

As the photographer in my family, I also get the role of archivist and managing the plethora of images sitting on my computer.   Resolution #5 is to make prints of my favorite photos and not just make 4&#215;6 prints.  You will be surprised that an 8&#215;10 or bigger actually starts to look small after awhile.</p>
<p>For great printing quality, I recommend <a href="http://www.mpix.com">mpix.com</a>.  In addition to your basic prints, they do books and canvas prints.  I also got a bunch of prints from <a href="www.shutterfly.com">Shutterfly</a> over the holidays because they had a great deal.  I was impressed by the quality as well.</p>

			<content:encoded><![CDATA[<p>Yesterday the family took a trip to <a href="http://campincolorado.com/federal/arapaho_roosevelt_nf/pickle_gulch_group/pickle_gulch.html">Pickle Gulch Campground</a> to cut down our own tree.  Through the forest service, you can buy a permit for $10 to cut down a tree and help thin out the forest to prevent forest fires.  Two kids, one dog, one red sled, and one tiny saw, we hiked a 1/4 miles to find our authentic colorado christmas tree.  I think we just found a new family tradition.  Once we finish decorating it,  I will post a photo of final project.</p>
